TASTING NOTES & FOOD PAIRINGS

In 2017, California endured its most destructive wildfire season ever, profoundly affecting wine regions throughout the state. Cakebread Cellars was very fortunate, because all but one of our eleven estate vineyards were spared any damage, and 99% of our fruit had been harvested before the fire hit. Many of our fellow Napa Valley citizens, winemakers and grape-growers were not so lucky, however, and as the community rises from the ashes, we are doing our small part to support the recovery efforts. As a result, we named our limited-edition cabernet sauvignon-based rosé Phoenix and will donate all profits from its sale to fire relief funds.

Fresh, inviting fruit aromas of strawberry, peach and cherry, with hints of vanilla and mineral, grace the nose of this beguiling, salmon-hued rosé. Its wonderfully refreshing flavors, buoyed by fresh acidity, lead to a crisp, lingering finish showcasing bright cherry and mineral tones.

VINEYARDS

VINTAGE

2017 was a roller-coaster vintage throughout Northern California. Winter brought the heaviest rainfall in 30 years, rejuvenating the vines after years of drought. Spring was mild, resulting in healthy flowering and grape set. Periodic heat spikes throughout the summer hastened ripening and harvest, although cool weather arriving in mid-September tempered sugar levels. By October 8th, when the wine country wildfires began, 90% of Napa Valley's crop had already been picked.

WINEMAKING

We night-harvested, hand-picked and cold-fermented our cabernet sauvignon grapes to enhance freshness and fruit purity, lightly pressing the clusters to extract just a blush of color. Roughly two-thirds of the juice fermented in stainless steel tanks, with the balance fermenting in neutral French oak barrels. The barrel-fermented portion of the wine spent three months aging in the same barrels before we blended it with the stainless-steel lot and bottled the wine early (January, 2018) to optimize its vibrant aromas and flavors.
