We ferment the wine with native yeasts in small, open-top tanks; a portion ferments with the grapestems to add spice and structure. Aging in French oak barrels prepares the individual lots for final blending, after which the blended wine barrel-ages for additional months. The finished wine offers aromas and flavors of lush black cherry, raspberry and blackberry, fine-grained tannins, notes of spice, and a flinty vein of minerality.
