Fermentation of each individual lot in small stainless steel tanks allows our winemaker to select the yeast, temperatures, maceration techniques and barrel aging regimens according to the unique personality of the wine, and to capture the finest attribute of each in the final blend before aging in French oak barrels. Bright aromas of violets, boysenberry and cherry are followed by flavors of ripe blackberry, fig, and chocolate that carry over the long finish. Firm, supple tannins give this 100% cabernet sauvignon wine depth and dimension
"The benchlands of Oakville and Rutherford lie along the foothills of the Mayacamas Mountains and offer distinctive soil profiles and protective shade, allowing grapes ripen slowly and evenly. This is a classic Napa Valley benchland cabernet sauvignon grown in part on the special Hill Ranch that surrounds the home of Jack and Dolores Cakebread."
