We harvest these grapes at night when the acidity and fruit are in perfect balance. The wine ferments in French oak barrels and a portion goes through malolactic fermentation to add creamy texture. Aging for more than a year in French oak, with stirring of the yeast lees, adds extraordinary richness and complexity.
